For the IRL, F1 and NASCAR how do each leagues cars change gears in the cars, is it by hand or the old school using clutch?
In NASCAR, they use a conventional stick shift with clutch pedal. It’s a 4 speed transmission that doesn’t need to have the clutch depressed to shift except into first.
In the IndyCar Series, they use a similar system to NASCAR, except that it’s a sequential shift (push stick up to shift up and vice versa) 6 speed transmission. There’s speculation that in the 08 season, IndyCars will have paddle shifters mounted on the steering column.
In most of the sportscar series (Rolex, ALMS, Mazda Pro, etc.), they have a stickshift with a sequential shift transmission.
Nascar uses a four speed transmission with a conventional shifter that can be shifted without a clutch. They use a small diameter multi disc clutch pack with a conventional clutch pedal.

They use the clutch to change down gears but not up as long as they have the revs high enough.
F1 use a paddle behind the steering wheel or a button on the steering wheel.
Left for down changes.
Right for up changes.
They use an automatic double clutch, no clutch pedal. The second clutch is already holding their next gear, so it’s instantanious.

All transmissions use clutches, even automatic transmissions. The difference is how the clutch is applied. The the IRL, F1, and Nascar guys all use the clutch pedal to engage the clutch to enter their first gear (starting gear). From there on out the clutches are set up by weight to synchronize the shift points at a set rpm, thus not requiring to engage the clutch by means of the clutch pedal. This principle is also used in drag racing in the pro mod and pro stock class. If you want to see how clutches really work, look into the Top fuel dragsters and top fuel funny cars. They are set up with a direct drive transmission and set up a multi-stage clutch to transfer the torque to the rear wheels at different points during the run.
